FoodWISE, grass farming, and resilient recipes

Gigi Berardi reads FoodWISE tonight, on resilience and grass farming, like Sweet Grass farm on Lopez Island practices. And in this time of adaptation, offers suggestions/adaptations/substitutions to cherished recipes like the Browned Butter and Mizithra Cheese dish at the Old Spaghetti Factory. “I never actually tried it, but it sounds delicious. I prefer to substitute vegetables—broccoli from Old Copper Farm on Shaw Island and potatoes from the Skagit Valley—for the pasta. I make my own Mizithra from the whey left over from cheesemaking—the milk is, of course, from my beloved sheep.” Shout out to Cari Miller for the idea!
