A bumper crop of dilly beans

I’ve talked about dilly beans in previous posts. They’re one of my favorite vegetables, especially when they’re freshly grown and prepared just-barely-ripe. They’re also one of my favorite pot luck dishes for Bunko with my good friends Nora and Diane and family. The three-page recipe for my dilly beans is on pp. 173-175 of FoodWISE. It’s not a complicated recipe, I just like being precise. And, to be fair, my dilly-bean partner is really the power behind the recipe. We make them a little spicy, and, whatever you do, be generous with the salt, garlic, and dill!

Fresh Beans, cleaned and trimmed

Don’t forget the garlic (we love our homegrown version)
and fresh dill (although dried dill weed and dill seeds are fine, too!)
