Favorite roasted potato recipe—light and fluffy!

I’ll share the trick right now, which is really a step—soak the potatoes (cut into cubes) in water!

Basically, all you do is cut the potatoes into 1-inch cubes, and soak in water to remove some of the starch. What this does is helps to make the potatoes crisp on the outside and fluffy on the inside. How long should you soak? About a half hour to two hours. You’ll need to drain and dry them before roasting so they don’t steam (see “spend with pennies”).

Then, for about two pounds of potatoes, use about a tablespoon or two of olive oil and toss in

  • ¾-1 tsp garlic powder (I talk about how and why I use garlic powder in FoodWISE—because its texture blends well with what I’m baking)
  • ½- ¾ tsp paprika
  • 3 tbsp rosemary, parsley, thyme (the recipe calls for basil, but I usually like to stick to the savory herbs, I admit I am partial to thyme, you could add a little marjoram, too)
  • Salt and ground pepper to taste (don’t skimp!)

I then coat the potatoes with the mixture and place on a baking sheet and bake, 45-50 minutes at 350 degrees or 30 minutes at 400 degrees.

The potatoes are delicious and a favorite entrée for entertaining.
